Baby Russet Idaho potatoes with bacon and onions.

Ingredients

  • 2lbs baby russet potatoes
  • 1/2 cup butter
  • 1/2 lb cooked bacon, chopped 
  • 12-15 pearl onion (or 1 med onion cut into chunks)
  • 2 Tbspn minced garlic
  • Salt & Pepper

Directions

Wash potatoes in cold water then move to a pot.  Fill pot with water just to cover the potatoes.  Sprinkle with 1 Tbspn salt.  Bring to rapid boil and let boil 6-7 minutes. (They will not be all the way cooked at this point.)  

As your potatoes are boiling put butter into large cast iron skillet over medium heat.  Melt then let simmer, slowly stirring 3-4 minutes.  

Drain potatoes and add them to the cast iron skillet. 

Now add garlic, onions, cooked bacon, salt & pepper.  

Cook over medium heat, slowly stirring, about 15-20 minutes or until potatoes are fork tender.
