Loaded Potato Crunch

Experience mashed potatoes in a new and creative way with this baked mashed potato recipe!


  • 2 lbs Idaho potatoes
  • 4 Tbsp butter
  • 1/2 C milk
  • 1 1/2 C shredded cheddar cheese
  • 4 slices cooked and crumbled bacon
  • 2 green onions
  • Sour cream, for serving
  • Salt and pepper, for taste


Preheat oven to 400 degrees (F)

Peel and cube potatoes and add to a large saucepan, then cover the potatoes with water

Bring to a boil and simmer until tender (about 20 minutes)

Drain potatoes and add them back to the pan to cook out any excess water (about 2 minutes)

Add the butter, milk, salt and pepper to a bowl and cover with boiled potatoes

Mash with potato masher

Mix in 3/4 C of cheddar cheese

Grease a large cookie sheet with olive oil

Spoon the mashed potatoes out onto the pan and spread evenly

Sprinkle the remaining cheese over the entire dish

Bake at 400 degrees for 45-50 minutes until the bottom edges are brown and crispy

Top with crumbled bacon and sliced green onions

Cut into squares and serve with sour cream
