Preheat deep fryer to 250 degrees
Wash and cut potatoes with fry cutter
Blanch, or partially cook, potatoes in 250-degree fryer for 2-3 minutes
Remove potatoes from fryer and allow to cool to room temperature while the fryer heats to 350 degrees
Cook fries at 350 degrees for 3-4 minutes
Top with choice of cheese curds (cheddar pictured) and gravy (slow cooked short ribs pictured)
