Having a Super Bowl party or just getting together for the big day?

Ingredients

  • 1 lb baby russets
  • 1-2 Cups cheese broccoli soup
  • Salt & Pepper to taste

Directions

Wash baby russets

Parboil or microwave (10 minutes in glass dish with plate on top) till potatoes are soft.

Cut potatoes in half length ways and scoop flesh from the halves with a spoon. 

Place the halves onto a non-stick cookie sheet and sprinkle with a generous amount of salt. 

If your soup needs thickened like mine did, just add some of the scooped out potato flesh and add salt & pepper into the mix. 

Scoop broccoli cheese mixture into halves.

Bake 15 minutes.

Cool 5 minutes, serve, and enjoy.
