Potatoes, bell peppers and corn make a quick and easy meal good for a weeknight or breakfast side dish.
Scrub and dice potatoes and place in a pot of water and boil until just tender, drain.
Dice the peppers and onions
Put 1 tablespoon olive oil in skillet and add the onions and peppers and saute 5 min, stiring occasionally.
Stir in potatoes and corn and seasonings to taste and cook 5-10 minutes until the potatoes are just browned, remove from heat.
Add Queso Fresco right before serving.
